Delicious Honey Baklava

This heavenly baklava recipe with Sunflower honey is super easy to prepare and makes a perfect gift for any occasion to friends and family.
Ingredients for the syrup
70 g unsalted butter
100 g soft light brown sugar
200 ml runny Sunflower Honey
120 ml water
1 teaspoon sea salt flakes
Zest and juice of 1 orange
Ingredients for the filling
50 g finely chopped walnuts
100 g finely chopped almonds
50 g finely chopped pecans
150 g finely chopped pistachios
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
100 g unsalted butter, plus extra for the tin
2 x 270 g packs of filo sheets
Preparation:
Mix the butter and brown sugar. Add 80 ml honey, water, orange juice and zest. Simmer for 3-4 minutes. Mix the remaining (120 ml) honey with the nuts, cinnamon and cardamom. Roll out the filo pastry and layer it up with the filling and repeat with the extra layers. (I did about 3 layers of filling and pastry). Place a layer of filo pastry on top, cut and bake for 30 minutes at 180 degrees. Pour over the syrup and bake for another 5 minutes. Let it cool before serving.
