Halloween Witch Fingers
Witches’ finger cookies are the perfect, easy and spooky, treats for Halloween!
They are made from a delicious buttery dough which is moulded into a knobbly finger shape, with strawberry jam as ‘blood’.
Ingredients (for 30 cookies):
100 grams softened butter
75ml Rape Blossom Honey
1 egg
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
80 grams wholemeal flour
90 grams plain white flour
Pinch of salt
Around 50 grams blanched almonds
4 tablespoons strawberry jam
Preparation:
Beat the butter and honey together in a large bowl. Mix in the egg, almond and vanilla extract. Lastly, add the flours and salt. When thoroughly combined, cover with cling film and place in the fridge for 30 minutes.
Preheat your oven to 160°C. Take ¼ of the dough out of the fridge and rolling it into a log shape, approx. the thickness of your pinky finger. Cut them into 6-8cm slices. Carefully shape the rolled dough into a knobbly finger shape. Use a knife to make indentations in the knuckles to make them look more like real fingers. Press a blanched almond into one end to form a fingernail.
Place the shaped cookies onto a baking sheet, leaving about 1cm between them.
Bake for 20-25 minutes or until slightly golden. Let the cookies cool, and then remove the almonds from the cookies. Add some jam in the cavities and then put the almonds back, making sure you used enough jam for them to ooze a little. Also add some jam around knuckles for extra visual effect. J.
