Raw Honey Date Squares
I stumbled on this recipe of Honey Dates Square, a historic recipe from the 1940’s, the era when sugar was scarce and use of honey and maple syrup was the only thing used in bakes.
This recipe is oil free and butter free. A perfect tea time cake which can be made in 30 minutes.
Serves 6
Ingredients:
2 eggs
130 grams mixed nuts, chopped
65 grams dates, chopped
65 grams figs, chopped
225 grams honey
96 grams gluten-free flour or whole wheat flour or all purpose flour
½ tsp baking powder
¼ tsp salt
Instructions:
Soak figs and dates in warm water for an hour and set aside till they become soft.
Deseed the dates and chop the figs and dates into small bites.
Chop up the mixed nuts and set aside.
Lightly whisk the eggs.
Add the chopped nuts, figs, dates and honey and mix together.
Stir in the flour. Add the baking powder and salt. Mix until everything is moist.
Preheat the oven to 180 degree Celsius. Line a 9”×9” baking tin with parchment paper.
Pour the batter in the baking tin and smoothen the top with a spatula.
Bake for 30-35 minutes till the tooth pick inserted comes out clean.
When ready, remove it from the tin from the oven. Once the cake cooled down, slice it into squares.
Enjoy with a cup of tea or coffee.
