Honey Roasted Pumpkin - Autumn treat
I would love to share with you one of my favourite autumn recipes. The pumpkin season is here so let's forget about the lanterns and make a delicious autumn snack for those cold evenings. By the way, this is also a healthy and nutritious snack for the kids a good alternative of chips.
Pumpkins & squashes are not only tasty but also very nutritious and packed full of goodness. I love to make them with lots of spices and delicious raw honey.
Ingredients
1 small pumpkin or 1/4 large pumpkin
2-3 tablespoons olive oil
A pinch of ground clove
1 teaspoon ground cinnamon
A pinch of ground nutmeg
Drizzle it generously with Raw Wildflower Honey
1 teaspoon of sea salt
Instructions
Heat oven to 200C. With a large metal spoon, remove the seeds and insides of the pumpkin. Save the seeds for roasting. Use a sharp kitchen knife to cut about 1 inch thick slices of the pumpkin.
Place pumpkin slices in a bowl, drizzle with olive oil and rub all around of pumpkin. Place the slices on baking paper or non-sticky oven tray. Season with salt, spices and drizzle with honey. (It's worth to try our Ginger honey for extra flavour.)
Roast for 18-20 minutes, depending on the thickness of pumpkin slices (check at 15-minute mark).
Warning! The kitchen will smell amazing! :)
