The colour of Acacia Honey is crystal clear, slightly yellow or greenish in some vintages. The smell of Raw Acacia Honey is identically an acacia flower scent. Its pure flavour and aroma make it unique and taste sweeter than most honey, while its acidity is lower. Raw Acacia Honey is rich in fructose, so it crystallises slower and stays runny longer.

I think we are well over the 60kg of raw acacia honey bought and consumed. We use it for everything as a sugar substitute because of its healing properties, mild flavour and versatility. Also used in salad dressings, sauces, on toast, in remedies for illness, in preventative beverages to boost immunity…and more. Possibly our most beloved kitchen ingredient.
